FSSAI stands for Food Safety and Standards Authority Of India and it comes under Ministry of Health and family welfare, Government of India.
FSSAI License Registration has been established under the Food Safety and Security Act of 2006 that sets standards for food products based on science and regulates their production, storage, distribution, sales and imports. Through a notification dated 13 July 2016 the FSSAI has made amendments to the Food Safety and Standards, these regulations have been called the Food Safety and Standards (Licensing and Registration of Food Business) First Amendment Regulations, 2016.

The objective of the Food Safety Act is to maintain the a particular standard of the food quality and to curb the adulteration and substandard quality of food thus ensuring the food which is consumed is fit for human consumption. All the manufacturers, traders, restaurants, small eateries, grocery shop who are involved in food business must obtain a 14-digit registration or a license number which must be printed on food packages or Displayed in Premises.
FSSAI License is mandatory for anyone who intends to do food business. This not only involves preparing food but everyone who handles food at various stages before it ultimately reaches the customer.(any intermediaries between farm to plate). Food FSSAI license is compulsory for the one who is doing food business. FSSAI regulates the distribution, sale, production, sale, import and export of the food across the country by laying down scientific standards for checking or measuring the standard of the food. This step or law was introduced by the government basically to maintain the quality of food and to curb the malpractices like adulteration and the use of substandard products.
FSSAI Food License has three categories:
License or registration with FSSAI is necessary for everyone who is doing a food business. Whether a FBO requires a License or registration depends upon the factors like capacity of production, handling nature of food business activities and area of operation.
FSSAI Registration Central License: Central Food license is issued by the Central Government for the food businesses whose turnover is above 20 crores. The business firms which work as Government agencies, large food companies, import-export business.If the food business involves only exporting then they should have Central license. Also, if the business is in more than one state and the head office is in other state Central licence is required.
FSSAI Registration State License: State Food license is issued by the State government of that particular state. It is necessary for food businesses who have annual turn-over between 12 lakhs to 20 crores. They are generally for medium scale businesses like storage, wholesaler, distributor, supplier, caterer, dairy units, food labelers and packers etc. State license is issued by state Government for the business operations strictly limited to one state itself and having turnover more than 12 lakhs.
FSSAI Basic Registration : For food business which have turnover less than 12 lakhs do not require license. For them only registration is enough. Though they do not require license, basic registration is absolute necessary for all types of food businesses. Basic Registration is also done by the State Government. All the types of small scale food businesses and small scale packers, distributors, sellers, small hotels etc need to have a Basic Registration.
A very large population almost 60% does food business on road-side as vendors. Often they have no idea about licenses and are harassed by the authorities. All these should have a basic registration so that they can do their business smoothly and also customer’s health is taken care.
